For my first “official” Mother’s Day, Sadie learned how to write! Amazing how much her handwriting looks like Rory’s.
Rory got up with her so I could sleep in a bit, which was quite the sacrifice as she was up at 6 am. blech! Thanks hon! Last night we went to see Star Trek-our first movie in the theaters together since before bebe was born. It was great! Thanks to Janae for dealing with a slight bedtime struggle. She’s been having issues. Back to Mother’s Day!
Rory bought this beautiful orchid (which i picked out), isn’t he sweet?
I hope it lasts awhile! Also, he bought me my roman shades and seeded the front yard! What a hard worker. He’s dealing with a sunburn today as a result of being in the sun all day. Not only did he finish roto tilling, rake, and seed the front yard, he helped a guy in our ward move to Morgan Hill. He’s gonna be the guy watching the front yard yelling at kids to get off his lawn. I’ll be right there next to him.
I made these vanilla cupcakes with strawberry cream cheese frosting. I hope they’re good, we’ll find out tonight at my family’s dinner. BBQ of course. The guys are cooking!
Here’s the recipe for the cupcakes:
Adapted from Ina Garten
2 2/3 cups sugar
6 extra-large eggs, at room temperature
1 cup sour cream, at room temperature
1 1/2 teaspoons pure vanilla extract
3 cups all-purpose flour
1/3 cup cornstarch
1 teaspoon kosher salt
1 teaspoon baking soda
3/4 pound (3 sticks) unsalted butter, at room temperature
1 pound cream cheese, at room temperature
3/4 pound confectioners’ sugar, sifted
1 1/4 teaspoons pure vanilla extract
The frosting was one stick of butter and one 8 oz cream cheese package, softened. I mixed it together until it was fluffy, then added 2-3 cups powdered sugar slowly. I also added pureed frozen strawberries with the syrup, about 1/2 cup or so, maybe 3/4. It’s a bit runny, so I may have to mess with it a few times before it’s perfect. Darn! 🙂
P.S. The cupcakes were VERY good.
P.S.S. Here’s to moms everywhere, my mom, Rory’s mom, Grandmothers, etc. You rock!
What a gorgeous orchid! It looks amazing! Happy Mother’s Day to you
Amazing how much Sadie has learned in only 8 1/2 months! Haha! Happy Mother’s Day!
